Recipe of the Month
May 2005
Irish Soda Bread
3 1/2 cups flour
1 tsp salt
1 tsp baking soda
11/2 tsp baking powder'
3/4 cup sugar
2 Tbs butter, melted
2 eggs, slightly beaten
2 cups buttermilk
1 cup raisins (can add up to 11/2 cups)
½ tsp caraway seed (optional)
1. Preheat oven to 325 degrees, lightly grease and flour a 12” skillet or use
non-stick pan.
2. In a large bowl sift together the flour, salt, baking soda, baking powder and
sugar.
3. Mix the melted butter, eggs and buttermilk, together and add to the sifted
products and stir with a spoon.
The batter will be stiff.
4. Stir in the raisins and caraway seeds.
5. Pour batter in prepared baking pan.
6. Make a cross in the center of the dough and fill the cross with some melted
butter.
7. Bake in the preheated oven for 1 hour or until a knife inserted in the center
comes out clean.
