ALICE'S PEACH PIE
2 PIE CRUST
1 3/4 cups flour
1 teaspoon salt
1/2 cup oil (Alice uses Canola)
3 tablespoons water
PIE FILLING
5 cups fresh peeled and sliced peaches
1 teaspoon lemon juice
1 cup sugar
1/4 cup flour
2 tablespoons butter or margarine
INSTRUCTIONS
Preheat the oven to 425 degrees.
2 -PIE CRUST
Mix the flour, salt and oil in a bowl.
Add water 1 tablespoon at a time until you have a nice consistency.
Divide into two equal parts.
Rollout between two sheets of wax paper.
PIE FILLING:
Combine the peaches, lemon juice, sugar and flour in a bowl.
Then pour into a 9 inch pie crust.
Dot with 2 tablespoons of butter or margarine.
Cover with pie crust and bake in the oven at 425 degrees for 35-45 minutes.
Notes: 1. May substitute Splenda for the sugar.
