Recipe of the Month
December 2007 Italian Chicken Pockets Ingredients: 1 pound boneless chicken breasts, cubed 2Tbs olive oil 1 Green Pepper chopped 1/2 onion chopped 1 cup sliced fresh mushrooms 4 oz. sliced pepperoni 1 cup spaghetti sauce ( I use Prego Fresh Mushroom) 3 Pita breads, halved and warmed Mozzarella cheese Directions: In large skillet, sauté chicken in oil until no longer pink. Add the green pepper, onion, and mushrooms, cook until tender. DRAIN Stir in pepperoni, and sauce, heat through. Sprinkle mozzarella cheese inside of pita pocket, spoon in chicken mix, top with more cheese. Makes 6 half pitas. (I double recipe) Great quick meal for after a long day shopping!
