Recipe of the Month
October 2007 BLT Cups Ingredients: 1 lb. fried crispy bacon 1 chopped seeded roma tomato 1 small onion diced fine 3 oz. shredded Swiss cheese 1/2 cup mayo (regular or lite) 1 10 oz. can flakey biscuits Directions: Fry bacon and when cool crumble in little pieces. Add first 5 ingredients in a bowl and mix. Spray a mini muffin pan with Pam. Peel apart 1 bisquit into 3 layers. Put one layer in muffin pan and "pat" it into place while pulling the sides up to fit the whole area. Scoop a generous portion of the BLT mixture over each biscuit. Bake375 degrees for 10-12 minutes or until biscuit is brown.
