Thumbprint Cookies


Ingredients:
½ cup margarine
¼ cup brown sugar
1 egg yolk
½ tsp vanilla
1 cup flour
¼ tsp salt
1 egg white
¾ cup finely chopped nuts


Directions:
Heat oven to 350
Mix margarine, brown sugar, egg yolk and vanilla thoroughly
Blend in flour and salt
Roll dough into 1 inch balls
Dip balls into slightly beaten egg white
Roll in chopped nuts
Place 1 inch apart on un-greased cookie sheet
Press thumb gently into centers
Bake 10-12 minutes
Cool
Fill thumbprint with jelly or fruit preserves
Makes about 3 dozen cookies
I usually use apricot or strawberry preserves.
