My Mom’s Adobo


Ingredients:
1 ½ lb chicken, washed and quartered
1 ½ lb potatoes, peeled and halved
2 tbsp vegetable oil
Red and green peppers sliced to 1 inch strips (optional)

Marinade
2 garlic cloves, minced
1 bay leaf
1 cup white vinegar
¾ cups soy sauce
½ tsp salt, ¼ tsp black pepper



Directions:
Marinade chicken in marinade for at least 12 hrs. Remove chicken and reserve marinade.

Cooking Instructions
Fry chicken in vegetable oil over medium heat until brown.
In another pot, start boiling marinade at medium heat.
Once boiling add chicken, after 5 minutes add potatoes cover with red and green peppers after another 5 minutes add a pinch of salt and cook another 15 minutes or until potatoes are cooked. Serve over either white or brown rice.
Serves 6.
