Recipe of the Month July 2006 Low-Fat Mock Fried Chicken Breast Ingredients: 4 – boneless skinless chicken breast (about 2” thick) 1- egg plus egg white 2 – tablespoons Dijon style mustard Italian style bread crumbs Salt (kosher is best) and freshly ground pepper Directions: Beat egg and egg white together, add mustard and mix completely. Season to taste both sides of chicken breast. Dip chicken alternately in egg mixture, bread crumbs, egg mixture and bread crumbs. Spray one side with spray oil (such as Pam) and bake at 350o for seven to ten minutes. Turn, spray again with spray oil and bake another seven minutes. Turn broiler on and finish chicken breast in broiler for another three minutes, turning once halfway through (three minutes should be enough, but broil until chicken is browned and crispy as you wish).
