Recipe of the Month
July 2006 California White Pizza Ingredients: 1 Whole bulb garlic ½ cup nonfat sour cream 1/3 cup (1 oz) crumbled feta cheese 1 tsp olive oil 1 large sweet onion, halved and sliced (about 2 cups) 1 large (10 oz) thin-crust Italian bread shell with cheese 1 can artichoke hearts, drained and chopped 4 oz (1 cup) shredded mozzarella cheese ½ cup finely shredded asiago or parmesan cheese Directions: Place garlic bulb in small microwave safe bowl, cover with microwave safe waxed paper. Microwave on high for 1 or 2 minutes or until very soft. Break garlic cloves apart, set aside to cool slightly. Press garlic cloves lightly to squeeze out soft garlic into small bowl; mash with fork. Add sour cream, mix well. Gently stir in feta cheese. Heat oil in medium nonstick skillet over high heat until hot. Add onion, cook and stir until onion begins to brown, add one tbsp water if needed. Place bread shell on ungreased pan. Bake at 425o F for two minutes. Top with artichokes, onion and shredded cheese, and return to oven. Bake for an additional 10 minutes or until cheese is melted. 6 servings.
