Recipe of the Month
June 2006 Angel Hair Pasta with Sun-dried Tomatoes and Feta Ingredients: 1 – 10 oz jar sun-dried tomatoes packed in oil (drain and reserve oil) 1 small onion chopped 4 garlic cloves minced ¼ cup tomato paste 2/3 cup dry white wine 8 oz angel hair pasta Salt (kosher is best) and freshly ground black pepper 1 oz crumbled feta cheese (more is better) 1 tablespoon chopped fresh Italian parsley leaves Heat 2 tablespoons oil from the sun-dried tomatoes over medium heat. Add the onion and sautee’ about three minutes. Stir in garlic for about another minute. Add tomato paste and cook 2 minutes, stirring constantly, Add wine and sun-dried tomatoes, simmer about two minutes until liquid reduces. Cook pasta in boiling water for about five minutes, drain and reserve about 1 cup of the liquid. Add the drained pasta to the tomato mixture and toss. Add some of the reserved liquid to moisten. Season the pasta with salt and pepper and then add the feta cheese and parsley and toss again. Yum!
