Microwave Mixed-Nut Brittle*


Ingredients:
1 C. Sugar
1/2 C. light corn syrup
1 C. mixed nuts
1 t. butter or margarine
1 t. vanilla
1. t baking soda
 

*BE SURE TO USE A MICROWAVE SAFE BOWL, NOT PLASTIC  HEAT FROM MIXTURE WILL MELT THE PLASTIC.


Microwave directions:
1. Line cookie sheet with foil, lightly butter foil. In 8 cup measuring cup or bowl combine sugar and corn syrup. Microwave on high for 4 minutes.
2. Stir mixture. Add nuts, blend well. Microwave on high for 3-1/2 to 4-1/2 minutes or until mixture is very light brown.
3. Stir in butter and vanilla. Microwave on high for 1 minute.
4. Add baking soda, stir quickly to blend.!!
5. Pour immediately onto butter foil spreading mixture with wooden spoon. Cool 30 minutes. Break into pieces. Store in air tight container.
