Recipe of the Month
April 2006 Blueberry Cream Cheese Casserole Ingredients: 1 Loaf of Texas Toast - cubed 1 pkg Cream Cheese -cubed 1 ½ cup blueberries (fresh or frozen) 2 T flour (Toss blueberries and flour together) 8 T melted butter 8 eggs 1 ½ cup milk ¾ cup syrup Cinnamon ~1 tsp (Mix butter eggs and syrup together) Directions: Grease 9 x 13 inch pan. Add ½ bread cubes and ½ of cubed cream cheese. Add ½ berries. Now add remaining bread, cheese and berries. Pour web mixture evenly over top, and sprinkle with cinnamon. Press bread down firmly into wet mixture. Cover and chill overnight in refrig. Bake at 350 F 50 minutes. One pan will serve about 20.
