Recipe of the Month
March 2006 Spicy Sausage Casserole Ingredients: ~2 T olive oil 1 lb maple sausage or Chorizo 1 sweet potato, scrubbed and sliced 1 red onion thin sliced (adjust) ~2-3 tsp chili powder ~1-2 tsp cumin ~2-3 tsp ground coriander 1 jar salsa (mild or medium) 1 jalapeno, remove seeds and ribs and chop 1 handful chopped cilantro 1 lime: juice and zest 1 handful chopped flat leaf parsley 2 cups cheese: cheddar or chiluahua 4 eggs beaten Butter Directions: Brown sausage in olive oil add sweet potatoes, most of red onion, all spices, Cook approx. 12 minutes (until potatoes are tender). Add parsley, salsa, jalapeno, cilantro, lime juice and zest salt and pepper to taste. Add 1 cup cheese and *beaten eggs. Mix and pour into casserole dish. * I added eggs last and mixed Add fresh red onion, and more cheese just before serving. Reheat casserole for 10 to 15 min just before serving.
